Rosé Luise

Our rosé is named after Karl Heinz grandmother Luise. It is a cuvée of Merlot and Pinot Noir. To make this wine, we begin with red winemaking techniques. Fruits are destemmed and rested on the skins and seeds. We use the saignée technique to bleed the juice from the tank, extracting the colour and tannins from the skins. From the removed saignée juice we vinificate the rosé Luise. Shifting to traditional white winemaking techniques, most of the juice is fermented in stainless steel tanks and a little part is fermented in used oak barrels aging there for five months.
