Rivaner is better known under the name Mueller-Thurgau. We label it deliberately Rivaner because our wine distinguish from the general Mueller-Thurgau taste.
Rivaner is a undemanding and grateful variety growing in cooler sections offering a naturally high crop. But we set a high value in deleafing and reducing the crop. Deleafing helps to avoid botrytis that the fruits can enjoy a long hang-time on the vines. Through the late-harvest flavours the wine has its very special character.
Fruits are hand picked and gently extracted during a long, slow whole cluster pressing. A leisurely cold fermentation in stainless steel tanks captures and preserves the lively fresh fruit flavors and aromas. When fermentation is complete, the wine
is moved to stainless steel tanks, aging as long as possible on light lees, adding a subtle richness and creaminess to the finished wine.
For that reason we bottle our Rivaner pretty late.
