Since 2008 we produce a Blanc de Noir. Using a white wine technique, Pinot fruits originally scheduled for a redwine are pressed gentle as whole clusters, separating the juice immediately to keep the coulour bright. To preserve the intense fruit character we ferment cold and slowly in stainless steel tanks. Really interesting how different a wine can look and taste compared to our red wine Pinot Noir.
